Macau Fisherman’s Wharf is located approximately a five-minute walk away from the Macau Ferry Terminal along the outer harbour of the Macau Peninsula, Macau Fisherman’s Wharf is the largest leisure and entertainment complex on the Macau Peninsula. We are in the process of redeveloping Macau Fisherman’s Wharf. We plan to redevelop existing facilities as well as adding a diverse range of new facilities, such as additional gaming areas, hotel accommodation, food and beverage outlets, retail space and entertainment venues in order to expand and enhance our unique offering.

Sous Chef (Western)
Job Description
Ensure that high efficiency and required standard of food production in all categories are achieved by good delegation and proper supervision
Check regularly on conditions of tools and machineries and report immediately back to Executive Chef in order to prevent interruption to the kitchen’s operation
Be creative and always has new ideas and developing new menus
Develop and test new dishes and products
Ensure no food borne illness happen in your sections. All food provided to guests must be of good nutrition and in conditions of absolute sanitation
Develop new ideas in conjunction with Executive Chef who will increase sales and reduce cost and better working methods
Be responsible for the quality of all food prepared in the kitchen he supervises. Constantly inspect taste, temperature and visual appeal. Make sure that all dishes are uniform and that established portion sizes are adhered to
Control standards of food production and presentation throughout the hotel
Job Specification
Secondary school graduated or above
Minimum 6 years of experience in F&B in a 5 star environment
Knowledge of Western or Portuguese cuisine
Able to build relationships
Able to distinguish product quality, taste, texture and presentation and observe preparation
Proficient in Cantonese and English
Self-motivated and independent
