Job Description: • Assist the Director of Food & Beverage in co-ordinating all phases of restaurants/group meeting/banquet functions held in the Hotel; coordinate these activities on a daily basis; planning and menu selection • Achieve budgeted food sales, beverage sales, labour costs and profitability • Timely analysis of Food & Beverage Prices in relation to competition and participation and input towards F&B Marketing activities • To co-ordinate with all large groups meeting/banquet planners their specific group requirements with the services & facilities offered. This includes proposals, contracts, estimated and actual function statements. With banquet or conferences, the Chef is to be included in food related discussions • Participation in Manager on Duty shifts as required in the absence of Director of Food and Beverage. • Assure bar inventory for functions, including opening and closing inventories, accurate bar summaries and cash deposits are prepared • Assure the ordering and purchasing of beer, wine, liquor, premix canisters and canned soft for Food& Beverage and vending • Consistent check of Restaurants, Bars, Banquet Food and Beverage quality, Banquet services and presentation • Work with the Executive Chefs, Executive Managers, Beverage Manager, Sommelier and Outlet Managers to ensure all arrangements and details are dealt with • Responsible for staff training and development and to achieve the services that exceeds expectations • Perform other job related duties as requested Job Requirement: • Degree or Certification in hospitality or equivalent • Previous experienced in similar job role or minimum of 15 years Food and Beverage experience with working experience in 5-star standard hotels • Excellent verbal communication in English, Cantonese and Mandarin • Able to multi-task and work in a fast-paced environment • Strong customer service orientation • Proficiency in Microsoft Office Interested Parties, please apply via: • Email the detailed resume to careers@macausjm.com • Hotline 89820288 / 68827115
