GCR - Director of Food and Beverage 餐飲部總監

The Grand Coloane Resort is situated on the southern tip of Coloane Island overlooking the spectacular Hac Sa Beach. The eight-storey grand complex, which is terraced into a lush mountainside, features Macau Golf & Country Club’s 18-hole tournament-style golf course on its rooftop and commands stunning views of the South China Sea.
Grand Coloane Resort offers 208 suites and rooms, each opening out to a private terrace overlooking the South China Sea, Hac Sa Beach or the Coloane National Park. Grand Coloane Resort is an ultimate retreat that suits everyone from couples and families to corporate groups.

We are now recruiting a Director of Food and Beverage at Grand Coloane Resort Macau, the key responsibilities of this position are as follows:

Key Responsibilities:
- Oversee the management of outlets and banquet operations, and lead all daily food & beverage preparation processes.
- Ensure high standards are maintained in all areas of food & beverage quality, service, safety, cleanliness and hygiene.
- Review pricing strategies, outlet menu concepts, staffing levels, service standard and profit margins.
- Achieve budgeted revenues & expenses and maximize profitability related to the food & beverage department.
- Work with the sales team to manage the development of new products and services.
- Develop promotions and advertising campaigns to increase sales and attract new customers.
- Coach, train and manage employees within the hotel’s organization structure.
- Manage inventory of food, beverage, and supplies to ensure that restaurants have adequate supplies for service.
- Ensure compliance with preparation and maintenance of required records, reports, and paperwork for the food & beverage department.
- Perform any other job-related duties as needed and required.

Job Requirements:
- Degree / Diploma holder in hospitality management or related disciplines.
- Minimum of 10 years of hotel experience and held the same position at 5-star international brand previously.
- Must have excellent customer relation skill and leadership capability.
- Must be detail oriented with outstanding organizational and communication skill.
- Team player with strong focus on training, coaching and employee development.
- Culturally adaptable with strong focus on relationship with teams, owning company and team members.
- Excellent command of both spoken and written English and Chinese, knowledge of Mandarin is an advantage.
