工作內容

• 確保正確操作自動洗碗機清洗餐盤、杯子、碟子、銀器等
• 確保根據所設標準洗淨餐具、瓷器、玻璃器皿及銀器
• 協助進行每月對營運設備及消耗品的盤點
• 確保為每個餐廳提供乾淨且乾燥的營運設備
• 確保為所有食品生產部門提供乾淨且乾燥的廚房用具
• 監督夜間廚房清潔工作和餐飲部的後勤區域
• 確保所有的清理工作嚴格遵守後勤區域清理條例和垃圾處理規定
• 負責統籌廚房內的保養維修工作，向有關部門提出申請，確保廚房範圍得到合適的保養維修

• 具備2年以上管事部領班相關經驗
• 熟悉餐具清潔流程、衛生標準及安全規範
• 熟悉HACCP 和 ISO 標準及相關文件的要求
• 審閱並核對 HACCP 文件與紀錄，確保準確性與完整性

• Proper handling of the automatic dishwashing machine that cleans and washes plates, cups, saucers, silverware, glasses and other dishes
• Ensures tableware, chinaware, glassware, and silverware are washed and cleaned as per the established procedures
• Assists in conducting monthly inventory checks on all operating equipment and supplies
• Assists to ensure that each outlet is supplied with clean and dry operating equipment
• Assists to ensure that the food production areas are supplied with clean and dry kitchen utensils
• Assists to supervise night cleaning contractors in kitchen and back-of-house food and beverage areas
• Ensures that back-of-house cleaning schedules and garbage runs are strictly adhered to and areas are cleaned according to established standards
• Prepares and issues repair and maintenance job orders to ensure the proper maintenance of the outlet

• Minimum 2 years’ experience as a stewarding supervisor or in a related leadership position
• Strong knowledge of dishware cleaning processes, hygiene standards, and safety regulations
• Familiar with HACCP and ISO standards, including all related documentation requirements
• Review and verify HACCP documents and records to ensure accuracy and completeness
