The Western Sous Chef is responsible to the Executive Sous Chef & Executive Western Chef for the proper efficiency, productivity and organisation of Western Kitchen or any dishes requested in any outlet of the hotel from the western kitchen.

  • Work with the Executive Sous Chef & Executive Western Chef on signature dishes, which support the concept in each of the outlets.
  • Control costs and margins through accurate recipes to ensure maximum outlet profit are achieved. 
  • Work closely with the outlet manager on optimising the outlet profitability.
  • Supervise the performance of all kitchen employees.
  • Responsible for the production, preparation and presentation of all food items to ensure highest quality at all times.
  • Complete daily inspections of physical aspects of all kitchen areas, cold rooms and equipment.
  • Support the Outlet Manager in marketing and upsell activities by creating an innovative menu and explaining the new dishes and preparation.
  • Stay informed of market trends and introduce new products and services to drive guest engagement, increase revenue and ensure a competitive position in the market.
Job Requirements :
  • Strong knowledge of cooking methods, kitchen equipment, and best practices.
  • Minimum 5 years of practical experience in a hotel or restaurant; 2 years' working experience in similar role
  • Must be able to deal with quality control, and production control.
  • Good understanding of MS Office software is an advantage.
  • Teamwork-oriented with outstanding leadership abilities.
  • Excellent communication and interpersonal skills.
