• 以 HACCP 的標準儲存及冷藏食品，保持廚房及用具的清潔衛生
• 須不斷改善健康及安全標準

職位要求
工作經驗：具最少八年從事於四、五星級日式廚房壽司廚師的工作經驗，有廚師發辦或板前料理工作經驗者優先考慮
技能 / 證書：對日式菜餚˴時令食材及壽司等瞭如指掌；精通刀切技術
教育程度：中學畢業或等同學歷
語言能力：流利廣東話˴普通話˴英語及基本日文

Job Purpose:
Produce high quality sushi and sashimi dishes to fulfil customers’ orders

Key Responsibilities:

• Produce high quality sushi dishes to fulfil customers’ orders
• Forecast sushi supply needs for the stock room and manage inventory levels
• Maintain HACCP standards for dry and cold storage of sushi ingredients, and cleaning and tidying the sushi station and utensils
• Continuously improve health and safety standards

Competencies and Requirements:
Experience: Minimum of 8 years’ experience as a sushi chef in a 5 star Japanese fine-dining kitchen, with Omakase working experience in advance
Knowledge/Certificates: Excellent product knowledge of Japanese cuisine, seasonal ingredients, and sushi; accurate knife skills and proven sushi abilities
Education: Secondary school or equivalent
Language Abilities: Fluent Cantonese, Mandarin, English and basic Japanese
