​主任 - 管事 Supervisor - Stewarding

Job Description:

• Monitoring all duties including sweeping, mopping, washing, equipment set up and cleaning chemicals usage, etc.
• Perform day-to-day back-of-house operations, including proper use and cleaning of dish room machinery, service ware, equipment, and stewarding areas
• Inspect supplies, equipment, and work areas in order to ensure efficient service and conformance to standards
• Ensure adequate supplies, equipment, tools, and uniforms are available for staff
• Control inventories of equipment and all wares and report shortages to designated personnel
• Maintain proper storage of table ware items in accordance to food hygiene manual
• Maintained complete knowledge of table ware use in all F&B outlets and banquets
• Ensure adherence to food hygiene, safety and fire procedures
• Perform other tasks assigned by superiors

• 監督管事員工的工作包括掃地、拖地、清洗、設備設置及清潔化學品的使用等
• 執行每日餐飲部管事的工作,按照正確的程序使用及清潔洗碗房的用具、設備和管事區域等
• 巡查工作用品、區域及設備,以確保符合標準及有效率地工作
• 管理工作時所需的物品,包括員工制服、清潔劑、清潔設備及用具
• 管理和控制設備和所有餐具的庫存,及向相關人員滙報短缺
• 根據食品衛生及安全守則,正確存放餐具
• 認識所有餐廳及宴會所需要的餐具
• 嚴格遵守食品衛生、安全及消防程序
• 執行上級分派的其他工作
